[FONT="]SCOPE & GENERAL PURPOSE OF JOB:[/FONT]
[FONT="]> [/FONT][FONT="]To direct, control and organize all staff, within your direct span of control,[/FONT]
[FONT="]including the Assistant Bar Manager, ensuring customer requirements are[/FONT]
[FONT="]satisfied.[/FONT]
[FONT="]> [/FONT] [FONT="]To assume overall responsibility for the running of the Bar.[/FONT]
[FONT="]>[/FONT] [FONT="]To carry out Duty Management shifts as required.[/FONT]
[FONT="]> [/FONT] [FONT="]To maintain an open and accurate channel of communication with the entire[/FONT]
[FONT="]Management Team.[/FONT]
[FONT="]>[/FONT] [FONT="]To implement, control & review all procedures relating to stock control, cash[/FONT]
[FONT="]handling, purchasing and stock & waste disposal as relevant to the bar dept.[/FONT]
DUTIES AND RESPONSIBILITIES:
[FONT="]Quality of Service:[/FONT]
[FONT="]To satisfy all customer requirements by ensuring that the[/FONT]
[FONT="]service is constantly maintained at a consistently high standard[/FONT]
[FONT="]with particular focus on regular clientele in the Public Bar[/FONT]
[FONT="]Productivity: To maintain and/or implement new efficient and effective work[/FONT]
[FONT="]methods and systems.[/FONT]
[FONT="]To prepare and issue, according to bar practice, staff rotes[/FONT]
[FONT="]which will provide adequate cover in the most effective[/FONT]
[FONT="]manner.[/FONT]
[FONT="]To carry out ordering of supplies as and when necessary.[/FONT]
[FONT="]To carry out accurate cash-up procedures at end of night.[/FONT][FONT="].[/FONT]
[FONT="]To be informed and aware of all relevant legislation regarding[/FONT]
[FONT="]service of liquor, the sale of tobacco, opening hours, etc.[/FONT]
[FONT="]2[/FONT]
[FONT="]To communicate regularly and efficiently [/FONT]
[FONT="]To constantly strive to improve the standards of hygiene and[/FONT]
[FONT="]service throughout the bar.[/FONT]
[FONT="]Cost Control:[/FONT]
[FONT="]To practice economy and to minimize any incorrect usage of[/FONT]
[FONT="]any resources with particular attention given to achieving G.P[/FONT]
[FONT="]Labor and minimizing variable expenses.[/FONT]
[FONT="]>To regularly price check all beverage items bought for the[/FONT]
[FONT="]operation, to ensure that we are buying at the best prices[/FONT]
[FONT="]available.[/FONT]
[FONT="]>To ensure all deliveries are checked in correctly and that all[/FONT]
[FONT="]relevant delivery dockets/ invoices are correct.[/FONT]
[FONT="]>To ensure that all services delivered within the bar operation[/FONT]
[FONT="]are being charged for correctly by[/FONT]
[FONT="]To continually monitor three beverage stock items per week,[/FONT]
[FONT="]and communicate any shortages to the General.[/FONT]
[FONT="]Supervision[/FONT]:
[FONT="]To hold regular departmental meetings.[/FONT]
[FONT="]> To direct, control and organize the assistant bar manager[/FONT]
[FONT="]and all staff within your direct span of control and to ensure[/FONT]
[FONT="]that the required standards are achieved and maintained.[/FONT]
[FONT="]> To advise staff of unavailability, [/FONT]
[FONT="]information relation to drinks, wines, etc., and any other[/FONT]
[FONT="]relevant information in order to ensure the efficient[/FONT]
[FONT="]operation of the Bar.[/FONT]
[FONT="]> To set good example for the staff with regard to[/FONT]
[FONT="]punctuality, attendance, attitude and hygiene.[/FONT]
[FONT="]> To liaise with the Human Resources Manager regarding[/FONT]
[FONT="]recruitment needs, and to carry out interviews as required.[/FONT]
[FONT="]> To train new staff in methods and procedures.[/FONT]
[FONT="]> To implement Grievance and Disciplinary procedures[/FONT]
[FONT="]where necessary, and report all serious breaches of[/FONT]
[FONT="]discipline to Operations Manager, General Manager.[/FONT]
[FONT="]> To provide induction training for new staff, and complete[/FONT]
[FONT="]Skills Checklists within their first month of employment.[/FONT]
[FONT="]> To assess training needs and provide relevant training.[/FONT]
[FONT="]Hygiene:[/FONT][FONT="]To practice high standards of personal hygiene at all times in[/FONT]
[FONT="]terms of grooming and uniform.[/FONT]
[FONT="]To maintain the required standards of operational hygiene[/FONT]
[FONT="]according to the cleaning rots at all times.[/FONT]
