Executive Chef

We are seeking a creative and innovative Executive Chef who is knowledgeable in all levels of dining experiences to lead the Culinary Operations of all brands. The incumbent will assume complete responsibility for multiple cuisines, concepts, and location kitchen operations. Initiatives and activities that the Executive Chef will be actively involved in include:

Responsibilities:


  • Supervises the creation of menus for the entire resort, in accordance with the principles of the Culinary Spirit, the concepts of the restaurants and the yearly action plan;
  • Ensures that all food served in the resort respects Hotel Standards, in terms of quality, taste, portioning, presentation and variety;
  • Selects fresh products and suggests suppliers to the purchasing manager, balancing quality, price, and service;
  • Responsible for overall performance, training of all chefs, utilities and those involved in food services;
  • Ensures that chefs and supervisory staff of the kitchen have a “big picture” vision, and a good understanding of the context;
  • Ensures that objectives are met in terms of score at hygiene inspections, and that HACCP standards are followed with consistency;
  • Ensures that recipes and costing for all dishes and food preparations served in the resort are accurate and updated;
  • Responsible to implement, control and manage all areas of responsibility per SOP’s;
  • Required to check all food outlets, buffets, action stations and food displays for creativity, quality and cleanliness;
  • Ensures that company guidelines for grooming and personal hygiene policies are followed;
  • Development of new menu items for all existing brands and new concepts with creativity;
  • Hands on in Quality Assurance programs in all outlets;
  • Producing bottom line results through inventory management, cost control, efficient management of costs and revenue generation;


Requirements (Key Skills)


  • Candidate must have worked for well-known brands as an Executive Chef for the last 4-6 years with large, high volume F&B production and a la carte;
  • Candidate MUST have excellent knowledge of various international cuisines;
  • Thorough knowledge of Public Health and Sanitation's regulations and procedures;
  • Thorough knowledge of food preparation, presentation and preservation procedures;
  • Advanced culinary skills and leadership experience;
  • Ability to co-ordinate and implement work schedules according to business level;
  • Fluent in interpreting and implementing company work rules;
  • Strong financial control knowledge;
  • Strong administrative skills, team player, open-minded and flexible;
  • Strong computer skills with knowledge of Microsoft Office programs;
  • Fluency in English language, other languages are considered a plus;
